Laat de kruiden ontdooien en uitlekken in een zeef. Verhit 50 gram boter in een pan. Bak hierin de ossenhaas rondom bruin; neem hem uit de pan en laat hem afkoelen. Rol het bladerdeeg op een goed met bloem bestoven blad uit tot een lap van ca. 30x25 cm. Wrijf de ossenhaas in met zout en peper. Verdeel de kruiden in een lange reep, net zo lang als de ossenhaas, over het deeg. Leg de ossenhaas op de kruiden. Vouw het deeg dicht en leg het pakje met de naad naar beneden op een met bakpapier beklede bakplaat. Vouw de zijkanten van het deeg naar beneden toe dicht. Laat het ½ uur rusten. Maak ondertussen de saus: verhit 25 gram boter in een pan; fruit het kleingesneden sjalotje glazig. Blus af met de wijn. Voeg de fond toe en laat de saus tot 1/3 inkoken. Breng op smaak met zout en versgemalen peper. Verwarm de oven voor op 200°. Bestrijk de ingepakte ossenhaas met eidooier en bak hem ca. 20 minuten in de oven. Laat hem 5 minuten rusten op een warme plaats en snijd hem dan in 4 plakken. Verwarm de saus en serveer die apart bij de ossenhaas.
