Bak ze in een pan in de boter snel aan alle kanten bruin. Doe de stukken over in een grotere braadslede; voeg de bakboter, wijn en kleingesneden ui toe; zet er een deksel op en Bak het konijn in de oven in 1½ uur gaar (als het vlees gemakkelijk van het been loslaat, is het gaar). Smelt voor de saus de boter; voeg de bloem toe en roer tot alle bloem door de boter is opgenomen. Voeg geleidelijk wat van de warme bouillon toe en de room. Blijf roeren tot het kookt en maak de saus op smaak met cognac, peper en zout. Nog pittiger wordt de saus als de even gezeefde braadjus wordt toegevoegd. Stukken konijn op een verwarmde schaal schikken; een deel van de saus erover gieten en de rest apart in een sauskom serveren.
