Breng de vruchtenrasp met het sap aan de kook en laat het op een laag vuur tot de helft inkoken. Laat het afkoelen. Week de gelatine circa 5 minuten in ruim koud water. Breng de melk in een pan aan de kook. Klop de eidooiers schuimig met de suiker en schenk wat hete melk bij het eimengsel. Roer het goed door en schenk het terug bij de melk in de pan. Laat het eimengsel op een laat vuur al roerend binden (niet laten koken). Schenk het gebonden mengsel (crème) direct door een zeef in een schone kom. Knijp de gelatine uit en los ze op in de crème. Roer het vruchtensap en de likeur door de crème en laat het afkoelen. Klop de slagroom stijf en spatel het door de sinaasappelcrème. Spoel de schaal om met koud water. Schenk de sinaasappelcrème in de schaal en laat hem in de koelkast minimaal 2 uur opstijven. Houd de schaal enkele tellen in heet water en stort de pudding op een mooie schaal. Was de stervruchten, snijd ze in plakken en leg deze op de pudding. Was de laatste sinaasappel en haal met de zesteur sliertjes van de schil. Garneer de pudding met de sinaasappelsliertjes.
