Maak de worteltjes, de asperges en de broccoli schoon. Snijd de groenten in stukjes. Kook de groenten in 3-4 minuten beetgaar. Spoel ze af en laat ze uitlekken. Pel en snipper het sjalotje. Pers het teentje knoflook erboven uit. Klop de eieren los met de room, de cognac, zout en peper en roer het sjalotje erdoor. Bestrijk 2 lage taartvormpjes (doorsnede circa 15 cm) met gesmolten boter. Bekleed elk vormpje met 3 vellen fillodeeg; laat het deeg over de rand hangen. Bestrijk het deeg met gesmolten boter en leg nog 2 vellen in de vorm. Bestrijk die ook met boter. Verwarm de oven voor op 200° (gasstand 4). Schenk het eimengsel in de taartvormpjes. Schep de groenten en de noten erin. Leg de plakjes brie over de vulling. Vouw het overhangende deeg losjes over de vulling en bestrijk ze nog een keer met gesmolten boter. Bak de taartjes in de oven in circa 25-30 minuten goudbruin en gaar.
