Smelt de helft van de margarine in een pan. Voeg de prei toe en stoof de groente op een laag vuur, al roerend, in circa 10 minuten zacht. Doe de rest van de margarine in de pan en laat deze smelten. Voeg al roerend de stukjes ei en de peterselie toe. Neem de pan van het vuur en roer de mosterd, mayonaise en kaas door het preimengsel. Bekleed een cakeblik met bakpapier. Doe het mengsel over in een cakevorm en druk het goed aan. Plaats de vorm in de koelkast tot de paté stevig is geworden (circa 2 uur). Stort de paté voorzichtig op een platte schaal en snijd er niet te dunne plakken van (1 plak per persoon). Tips: Als het mes niet goed door de paté gaat, maak hem dan eerst nat met warm water. Omdat de paté in een cakevorm moet, zijn de ingrediënten bedoeld voor 8 personen. Je kunt de volgende dag de rest van de paté gebruiken bij bijvoorbeeld de lunch met stokbrood of toast en soep.
