Breek de bloemkool in kleine roosjes, was ze en snijd ze fijn. Was de paprika en snijd deze in kleine stukjes. Smelt de boter in een grote braadpan en fruit daarin de ui samen met de gepelde knoflook. Voeg 2/3 van de peterselie toe, samen met de kerrie en de paprika en bak nog circa 2 minuten. Voeg de fijngesneden bloemkoolroosjes toe. Roer goed, leg het deksel op de pan en laat de bloemkool in circa 15 minuten zacht worden. Roer de bloem erdoor en voeg in delen de bouillon en melk toe. Roer goed na elke toevoeging om klontjes te voorkomen. Breng de saus langzaam, al roerend aan de kook en laat hem binden. Breng op smaak met zout en peper en roer de cheddar erdoor. Laat de kaas smelten. Giet de tagliatelle af en schep op ieder voorverwarmd bord een bergje pasta. Giet daarover heen de saus en garneer met de rest van de peterselie en wat gehakte walnoten. Tips: Je kunt borden heel gemakkelijk zonder oven voorverwarmen door ze 5 minuten in warm water te leggen. Zet een schaaltje parmezaanse kaas en gehakte walnoten op tafel voor de liefhebbers. Variatie: roer door de saus een eetlepel uitgelekte kappertjes.
